Ingredients

  • 3-4 slices bacon (I apply thick-cut salary)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 ane/2 lbs. boneless, skinless chicken breasts, cut into i/2-inch pieces

  • 1 lb. Brussels sprouts, trimmed and halved (quartered if they are large)
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon kosher common salt, divided
  • one/2 teaspoon black pepper, divided
  • 1/4 teaspoon nutmeg
  • ane small red apple (I use Fuji or Gala), diced
  • 1/4 - 1/2 cup low-sodium chicken goop (see notes)
  • 1/ii cup walnuts, roughly chopped
  • i/3 loving cup dried cranberries
  • one tablespoon chopped fresh thyme (run across notes)

Instructions

  5. If the pan is dry, add an additional tablespoon olive oil. Add sweet potatoes, Brussels sprouts, cinnamon, nutmeg and remaining salt and pepper. Stir to combine and cook for 3-4 minutes to allow the vegetables to brown.
  6. Add apples and craven broth then cover and melt for 10-15 minutes. (Cheque and add together more than goop equally needed to prevent any burning or sticking)
  7. One time the vegetables are tender, stir in cooked chicken, walnuts, dried cranberries and thyme and mix for 2-3 minutes, until everything is warmed through.
  8. Season to sense of taste with boosted common salt and pepper and serve with reserved, crumbled bacon.
